I always get so excited when I add a new food into my diet.
Today it was zucchini!
I love it!

As you know I am working out more and trying to get fit, so I am constantly on the lookout for new and healthy things to try. Fitness is 80% diet and 20% exercise after all.. Or something like that lol!

Today, for my post workout meal I was supposed to have spaghetti and meatballs. Instead of having spaghetti (as it is loaded with carbs).. I subbed it for zucchini ribbons.
I low boiled them until al dente before adding lime and siracha sauce and then adding my meatballs on top. To say it was amazing is an understatement. It was divine! It is definitely something that I will be keeping in my diet, tastes exactly the same as normal spaghetti and is just as filling with less of the bloat!

Hmm.. Zucchini.. I’d eaten most of it before I remembered to take a photo!

The meatballs are a little darker than I’d like because I forgot them in the oven! (Yes I bake my meatballs.. This method is much healthier than frying..) As I used extra lean mince I think that they dried out quicker.. Still very tasty though!
