Day 279..#Roasted Vegetable Couscous..

I haven’t had couscous for a while..

Not any that I’ve liked anyway..and roasted vegetables are my latest thing..so I decided why not make some roasted vegetable couscous with some lovely balsamic vinegar glaze.

Balsamic vinegar is fabulous!

I cut up my vegetables

Mushrooms, Carrot, Cherry Tomatoes, Onion and Green Peppers

Then I put them in the oven at 180 degrees Celsius for about 20 – 30 minutes, before turning off the oven and leaving it to cool 🙂

I then prepared my couscous (I always do so into a measuring jug..it’s just easier), plated up, added the vegetables and drizzled with some balsamic vinegar..*I wasn’t patient enough to make the glaze!*

Voilà!

 

*I also added some chicken sausage..but it really doesn’t need it..next time..adding more vegetables!*

  1. that looks very good, so for roasted veggies, u just in oven for 25 min?

    • Yep..I also added 5 teaspoons of olive oil (drizzled over the top) and salt and pepper to taste 🙂
      I kept my eye on them..I’m in a new house with a new oven..didn’t want them to burn..you can take them out when the onions have softened..you’ll know 🙂

  2. That looks delicious! I love large chunks of fresh veges, and I’ll have to try that, but may use apple bratwurst instead for that appley taste.

  4. Yum! Love cous cous with roasted veg… try grilling/melting some feta over it too, you will love it! 🙂
