Day 164..#Caramelized Onions and Mushroom Risotto with Pan Seared Chicken (My Version!)
Okay..so all of you guys probably already know about my love of cooking..
I’ve been wanting to cook something good for daaaaayyyys now..
I’m subscribed to Elly Gramatikova at Let’s Spice Things Up in Vegas and she has an AWESOME cooking blog..*that I secretly stalk* lol
So most days, I get emails from her that I only wish I had the ingredients to replicate!
Two days ago..I got an email:
[New post] Caramelized Onions and Mushroom Risotto with Pan Seared Chicken
I opened it…eyes beaming..I’d never tried risotto before..
I scanned it..I have all the ingredients I thought..why not give it a try?
So this evening..I did!
I cheated by using a different kind of rice (it’s called Carolina rice here in Portugal) and here are the results!
This is a phenomenal recipe!
I followed it to a tee..minus not using the right rice and not adding caramelised onions on top..but I have some mixed in!
I used chicken breasts, that I sliced length-ways to make it thinner and I must say..I have never cooked cooked chicken with just salt and pepper (I didn’t have any black pepper so I used red pepper)..I am pleasantly surprised with the outcome..it tastes amazing!!

P.S. Funny thing is..I never liked mushrooms till I came to this country..it’s turning out to be a very worthwhile experience for me 😛

I’ve gotta start blogging about cooking! It’s one of my favourite past times. I’ve sort of been neglecting it of late. Although, I do make some chocolate coated Brazil nuts the other day, sprinkled in coconut. That’s not cooking. I was just feeling like a tasty, decadent treat! 🙂
